Chicken Manchurian is a mixed version of Indo-Chinese food. It is a widely popular and hot favorite dish among kids and adults in the Indian subcontinent. Fried chicken cubes tossed in manchurian gravy taste so yummy.

The blend of sweet and savory flavors makes the chicken Manchurian a typical dish. It acquires these distinctive flavors from soy sauce, tomato ketchup, and vinegar.

This restaurant-style dish is served as a starter or as a side with egg fried rice, chicken fried rice, plain rice (boiled), or noodles. In Pakistan, it is usually served on a hot sizzling plate to keep the gravy hot and sizzling.

It is a super easy dish. You can make this yummy delight at home without any hassle. Enjoy the taste of this restaurant-style dish at home and on certain occasions like get-togethers and indoor or outdoor parties.

How to Make Chicken Manchurian

It is a simple and easy recipe. Let’s see which ingredients we need to make this dish and how can we prepare it easily at home.

How to prepare this dish? Firstly, marinate the chicken cubes in a marinade prepared with soy sauce, salt, garlic powder or paste, black pepper powder, sugar, egg white, cornflour, and all-purpose flour. After marination, deep fry the chicken cubes and then prepare the sauce for this dish.

The chicken Manchurian sauce includes cooking oil, tomato ketchup, chicken stock, salt, red chili powder, white pepper powder or black pepper powder, garlic paste, vinegar or lemon juice, sugar, and cornflour. After the preparation of sweet and savory sauce, the fried chicken cubes are tossed in it to have a wonderful dish.

Here are 4 easy and simple steps to prepare this amazing dish at home.

Step 1: Marination

First, marinate the chicken by combining the ingredients; soy sauce, garlic powder or paste, black pepper powder, salt, sugar, and egg white. Mix all these ingredients well.

Now in a small bowl mix 4 tbsp cornflour with 2 tbsp all-purpose flour and then add it to the already combined ingredients. Mix well.

Next, apply the marinade thoroughly to the chicken pieces. If you feel the marinade is thick you can add little water to it. Set aside to marinate for 30 to 45 minutes. After marination is done, start frying.

Step 2: Frying Chicken

Heat the cooking oil in a frying pan for deep frying. Fry the chicken cubes on medium-high flame. When the oil is hot enough start dropping the chicken pieces one by one. Do not drop all the pieces together.

If you cannot fry all the pieces in a one-go, you may fry them in batches. One batch of chicken cubes will take 6 to 7 minutes to fry. Fry them till light brown color.

Once done, transfer the fried pieces to a paper towel so that the excessive oil may absorb into the paper towel. After frying all batches, prepare chicken manchurian sauce.

Step 3: Sauce Preparation

Heat 2 tbsp of cooking oil in the pan. Put in garlic paste and sauté till light brown. Add red chili powder and fry it slightly. Add vinegar or lemon juice and chicken stock. Chicken stock enhances the flavor. You can add the chicken powder as a substitute for chicken stock. Stir it.

When it starts boiling, add tomato ketchup. To get the best sauce, use tomato ketchup of a good brand. Stir all these items well to combine. Now mix in 3 to 4 drops of red food color to give it a nice reddish color. It is optional, you may skip it.

When the sauce starts bubbling, include white pepper powder. You can add black pepper powder as a substitute. Now add salt along with sugar. Stir all to mix well.

Step 4: The Chicken Manchurian

Turn the flame to medium-low. Put the fried chicken cubes into the sauce and toss them well to coat with the sauce.

To thicken the chicken Manchurian gravy, make cornflour slurry by mixing 2 tbsp cornflour with 3 tbsp of water. Next, add it to the gravy. Add the slurry gradually while stirring at the same time. Cornflour takes 1 to 2 minutes to cook. Continue cooking the manchurian gravy to your desired thickness.

Meanwhile, heat the sizzling plate for 2 to 3 minutes then lubricate it with butter. Then pour in the Chicken Manchurian on the sizzling plate and serve it hot and sizzling. You can enjoy this dish with my fried rice recipe.

Tips For The Best Chicken Manchurian

  • Use 1 egg white only for a half kg kitchen. Using more egg white may turn the mixture mushy.
  • Add chicken stock or chicken powder to the gravy as it gives a nice flavor.
  • Use tomato ketchup of a good brand to get the best taste.
  • When frying, drop the chicken pieces one by one in the oil. Do not drop all the pieces together.
  • Drop the cubes in the oil only when it is hot enough. To check if the oil is hot enough, drop in a small portion of batter. It must rise before browning.
  • Transfer the fried pieces to the paper towel so that the excessive oil may absorb into it.
  • To avoid making lumps in the gravy, add cornflour gradually while stirring it at the same time.
  • For a buttery taste, lubricate the hot sizzling plate with some butter before putting the chicken manchurian on it.

Ingredients
  

  • ½ kg chicken boneless
  • cooking oil (for deep frying)

Marinade

  • 1.5 tbsp soy sauce
  • 1 tsp salt or to taste
  • 1 egg white
  • ½ tsp black pepper powder
  • 1 tsp garlic paste or powder
  • 1 tsp sugar
  • 4 tbsp cornflour
  • 2 tbsp all-purpose flour

Manchurian Sauce

  • 2 tbsp cooking oil
  • ½ tbsp garlic paste
  • ½ tsp salt
  • ½ tsp white pepper powder or black pepper powder
  • 1 tsp red chili powder
  • 1 tbsp vinegar or lemon juice
  • 1 cup tomato ketchup
  • 1 cup chicken stock
  • 3-4 drops red food color (optional)
  • 1 tsp sugar

Cornflour Slurry

  • 2 tbsp cornflour
  • 3 tbsp water

  • Prepare marinade by combining the marinade ingredients. Mix well. Then mix cornflour with all-purpose flour in a small bowl and then add it to the marinade. Mix well.

Preparing Manchurian Gravy

Notes

If you prefer, you can pan-fry or grill the chicken cubes instead of deep-frying.
For rich flavor, prepare the chicken stock at home but for convenience, you can mix store-bought ½ chicken stock cube in a cup of water to prepare one cup of chicken stock.
You can use chicken powder as a substitute for chicken stock. Dissolve 1 & ½ tsp of chicken powder in one cup of water to add it to the manchurian sauce.
