Fried Rice Recipe
With this special fried rice recipe, prepare delicious and flavorful Chinese fried rice at home.

- ½ kg Rice (good quality)
- 3 tsp Salt (used while cooking the rice)
- 1 cup Cabbage (julenned)
- 1 cup Carrot (julienned)
- ½ cup Capsicum (julienned)
- 2 to 3 Green Chilies (sliced)
- ½ cup Peas
- 1 Sliced Scallions (Fresh green Onion)
- 1 tsp Garlic Paste
- 1 tsp Ground Black Pepper
- 1 Chicken Cube
- 2 Eggs
- 2 tbsp White Vinegar
- 2 tbsp Soy Sauce
- 3 to 4 drops Food Color Yellow (optional)
- 1 tsp Salt (or to taste)
- 3 tbsp Cooking Oil or Butter
- 2 tbsp Roasted sesame oil (optional)
Cooking the Rice
Pour 3 liter of water into the pan, cover it, and bring the water to boil on high flame. It will take 3 to 4 minutes. Add the soaked rice to the water.
Cook the rice on high flame for 8 to10 minutes till al dente.
After cooking, drain the water from the rice through a strainer and set them aside.
Frying the Eggs
Whisk 2 eggs in a bowl and sprinkle 1 pinch of salt over it. To develop the color, put 2 to 3 drops of yellow food color (optional) into it. Beat the eggs well.
Take 1 & ½ tbsp cooking oil in a pan. Heat the oil slightly and fry the eggs on medium flame. Keep stirring while frying the eggs. It will take 1 & ½ minutes till the eggs get fried. Set aside the scrambled eggs.
How to Cook Fried Rice
Heat 3 tbsp cooking oil in a non-stick pan and add 1 tsp garlic paste. Fry over the low flame till the garlic is lightly browned.
Now set the flame to high and add ½ cup steamed peas to it.
Add julienned cabbage and steamed carrots and stir-fry them.
Sprinkle 1 pinch of sugar over it. Then add 2 tbsp soy sauce and 1 tsp ground black pepper. Stir-fry all the ingredients.
You can add chicken cube 1 piece mixed with vinegar 1 tbsp to it. You can use chicken powder 1 tsp as a substitute. Sprinkle 1 tsp of salt over it. You can also add 1 tbsp white vinegar. Mix well.
Add ½ cup julienned capsicum to the other vegetables.
Add cooked rice. Next, mix the rice and the veggies with the specific method.
Add fried eggs along with 2 to 3 fresh green sliced chilies and the green part of fresh green onion. Mix all the items with the specified method.
It will take almost 2 to 3 minutes to fry the rice and veggies together. Turn off the flame and put the fried rice in the serving dish.
