Ingredients
  

  • 1 kg whole chicken
  • 2 tsp salt
  • 1-½ tsp black pepper powder
  • 2 fresh green chilis
  • 25 garlic cloves
  • 4 tbsp lemon juice
  • 1 tsp mix spices powder (garam masala)
  • ¼ cup cooking oil
To Prepare Sauce (Chutney) for Roasted Chicken
  • 1 cup yogurt
  • ¼ bunch fresh green coriander
  • ¼ bunch fresh green mint
  • ¼ tsp salt or to taste

Method
 

Rotisserie Chicken Seasoning
  1. Prepare the fresh seasoning or spice rub by combining garlic cloves, fresh green chilis, whole black pepper, and salt. Add lemon juice or vinegar to it.

  2. Add mix spices powder (garam masala).
  3. Grind all these items well with a mortar and pestle.

  4. Add cooking oil and mix all these things well with the help of a spoon.

  5. Now take the whole chicken. Remove its giblets and wash the chicken thoroughly. Dry the chicken with paper towels.
  6. Apply deep cuts with a knife on the whole chicken at a distance of 1 inch.

  7. Season the chicken evenly and generously on all sides and inside the cuts. Marinate it for half an hour.

Sauce for Rotisserie Chicken
  1. Take a mortar and pestle. Put the chopped fresh coriander and fresh mint into it. Add salt to taste. Grind all these things well.

Primitive Rotisserie Mechanism
  1. Prepare 4 wooden sticks of 8-9 inches in length. Make two crosses and fix one wooden cross at one side of the spit. Meanwhile, prepare charcoals by burning the wood in the fireplace.

  2. After marination, skewer the chicken on the spit. Truss the chicken with a string and fix the second cross on the other side of the spit.

Chicken Roasting
  1. Place the chicken 8 to 10 inches above the glowing hot charcoals. Roast the chicken over medium heat. Rotate the chicken every 2 to 3 minutes. The chicken will be cooked through in 2 hours to 2 and ½ hours.
