Now we’ll coat the chicken with the marinade made of some spices and other ingredients.
Shift the chicken to a mixing bowl or another pot. Add yogurt, ginger-garlic paste, salt, red chili powder, tikka masala, turmeric powder, garam masala (coarsely ground) or garam masala powder, and lemon juice or vinegar.
Coat all the chicken pieces well by mixing all the ingredients well with your hand and rubbing the marinade on the chicken pieces. Now place it in the refrigerator for 2 to 3 hours for marination. If you are short of time, keep it for at least 1 hour in the refrigerator.
How to make Tawa Chicken
Step-1
Heat the Tawa slightly. Pour ghee on it. You can use cooking oil or butter as a substitute. Heat the oil slightly. Pour the marinated chicken on Tawa. Cook it on a medium flame for 1 minute. To make the chicken tender with steam, cover it for 7 to 8 minutes. Keep flame low to medium.
Step-2
After 7 to 8 minutes remove the cover. The chicken will have released water. Dry this water on a high flame. When the chicken becomes dry, add blended onions and tomatoes (blended separately in a blender). Cook on medium to high flame.
Step-3
When you get a one-tone texture gravy and oil starts separating turn the flame to medium. Fry the chicken for 5 to 6 minutes more. Fry it well to get the best taste.
Step-4
Now season it with black cumin seeds, dry coriander seeds (coarsely ground), and black pepper powder. Fry all things for 1 minute. We add these spices at the end to get a nice aroma and flavor.
